Vegetarian Ceviche

Ingredients

  • 2 English cucumbers, seeded and sliced
  • 2 large tomatoes, sliced (any color)
  • 1/2 small red onion, sliced
  • 1/2 bunch fresh cilantro, sliced
  • 1 (14 oz) can hearts of palm, cut in rings
  • 2 jalapenos, sliced (or to taste)
  • Salt and pepper (to taste)
  • 2 limes, juiced
  • 1 tbsp olive oil
  • 1 Red and 1 green bell pepper, diced
  • 1 Avocado, peeled and diced

Directions

Cut hearts of palm in circles & pop out the middle. Chop everything else as directed & mix all ingredients together. Serve in martini or margarita glasses with a little cilantro & fresh black pepper on top.
